Scheme for Quality Control and Hygiene Related Training.


To impart training to skilled and un-skilled people who are associated with manufacturing of food products and in Dhaba, restaurant and food processing units, about Good Hygiene Practices, Good Manufacturing Practices, Hazard Analysis and Critical Control Point, Personal Hygiene, Sanitation and Quality Control. The training will be imparted by doctors and food processing experts. The objective is to motive such workers to prepare clean and quality food items. Duration of each program will be of 2 days in which 50 trainees per program will be trained.

Implementation of scheme

Quality control and hygiene related awareness training programs will be organized at government community fruit preservation and training centers situated in districts.

A provision of Rs 12 .00 lac has been made under the scheme for the year 2016-17. The physical target in proportion to the allocated fund in the budget is as follows

Quality control and hygiene related experts from universities / technical educational institutions / health department / food safety and drug administration department / quality control labs will be necessarily invited for quality control and hygiene related awareness program. The subject experts will be paid honorarium of Rs 500.00 per lecture as per rules.

Training literature and writing material

Trainees would be given program related literature, pen and pad on which would bear the words - 'Horticulture and Food Processing Department, U.P.' Entrepreneurship Development Training Program year 2016-17’ and the name of organizing center/institution. The expenditure on these items will be made under this head.

Hiring of vehicles for guest lecturers

Payment will be made under this head as required, for hiring of vehicle to ferry guest lecturers from their homes.

Other expenses

Payment will be made for expenditure made on other incidental heads related to program.

Under any circumstances, expenditure of more than the prescribed amount for the program should not be made and all expenditures should be made as per conditions/restrictions given in concerned government orders/relevant rules/directions. Moderation should be followed for all expenses. For any irregularity in expenditure, the concerned head of office, drawing and disbursing officer will be personally responsible.

The sanctioned funds are under the condition that funds will be used for determined purpose and the expenditure details and audit statement of account will be presented to the government in due course. The related balance sheet and accounts of Director, Horticulture and Food Processing Department, Uttar Pradesh, Lucknow will be available for examination / perusal of Controller and Auditor General of India and the officials authorized by them.

The curriculum of the two – day training program will be as follows

Day – 1

  • What is quality and control?
  • Importance of cleanliness in quality.
  • Precautions to be taken for storage and handling of fresh and processed products.
  • Reason of decay of fresh and processed products.
  • Individual cleanliness - Personal hygiene of food handlers.
  • Need of medical check-up – Medical check-up of workers.

Day – 2

  • Cleanliness of equipment.
  • Methods of cleanliness of and prevention of contamination
  • Cleanliness of kitchen.
  • Importance of cleanliness of the complex.
  • Information regarding quality of water being used in kitchen or workshop and prevention of diseases caused by polluted water.
  • Toilet and facility for washing hands.

Handbills and posters etc. regarding food storage, dust, protection from insects – pests should be displayed at the place of training so that people get ample information after training regarding cleanliness in their life and general public get a long term benefit and they have prevention from diseases.
